
(Sorry the picture isn't that great again, as usual I didn't take one until after we dished up half of it.)
Chicken Parmesan Bundle - 400 calories each
- 4 oz cream cheese, softened
- 1 package (10oz) of spinach (I only used about 4 oz because Gary doesn't like cooked spinach, he liked it and couldn't taste it with a smaller amount.)
- 1 1/4 cup shredded mozzarella
- 6 tbsp Parmesan
- 6 chicken breasts
- 1 egg
- 15 ritz crackers crumbled
- 1 1/2 cups spaghetti sauce
Preheat oven to 375. Pound chicken breasts out to 1/4 inch thick. The best way to do this is to go out and get a meat tenderizer/mallet thing. I had tried some recipes without one and it took a lot longer. Mix cream cheese, spinach, 1 cup of mozzarella, and 3 tbsp of Parmesan together. Spread onto chicken. Roll chicken tight, secure with toothpick if necessary. Beat egg in a shallow dish. In a bowl, mix remaining Parmesan with cracker crumbs. Dip chicken in egg, then roll in crumbs. Place in 13x9 dish sprayed with Pam. Bake 30 minutes, or til chicken juices run clear. Top with spaghetti sauce and remaining mozzarella. Put back in oven for 5 -10 minutes, or til cheese is melted and sauce is hot.
