Potato, Chicken, Cheese Soup

This recipe is super yummy! I got it from Gary's mom, so it has to be. The picture I took isn't that great, but please believe me....it's delicious!


Potato, Chicken, Cheese Soup
  • 4 large potatoes peeled and diced
  • 2 cups of diced carrots
  • 2 cups finely chopped celery
  • 1 onion finely chopped
  • 3 chicken bouillon cubes
  • 6 cups water
  • 2-3 cups of cooked diced chicken
  • 3/4 cups flour
  • 1/2 cup butter
  • 4 cups milk
  • 1 1/2 - 2 lbs Velveeta cheese
  • 1-2 tsp dry mustard
  • 1/4 tsp pepper
Simmer first 6 ingredients for 1/2 hour. Add cooked chicken, simmer for 15 minutes. Melt butter in large saucepan. Whisk flour and milk into melted butter. Cook and stir till thick. Add cheese and spices. Stir constantly until cheese is melted. Add cheese mixture to soup stirring constantly, do not boil.

We had almost this exact same soup yesterday, only slight differences in the recipe. So good!
