Bacon-Roasted Chicken and S'mores Brownies



Gary and I love this recipe, it's super yummy and also pretty easy. The picture isn't the greatest, but I didn't think to take one until after we had dished up half of it.

Bacon-Roasted Chicken and Potatoes - 400 calories per serving
  • 4 chicken breast halves
  • 8 slices of bacon
  • salt and pepper to taste
  • 1 onion chopped (tasted good without the onion too)
  • 1 1/2 lbs yellow potatoes (I've used regular russet potatoes since that's what I have around. I just peeled and chopped about 6 potatoes)
Seasoning:
  • 2 tbsp dried chives
  • 2 tbsp basil
  • 1 tbsp garlic
  • 1 tbsp adobo seasoning (I omitted this because it isn't something I have around the house)
  • 1 tbsp pepper
Preheat oven to 400. *This isn't in the recipe, put I precooked the bacon a bit to where it was still floppy but also browned a bit (we like our bacon a little crispy and it didn't get cooked to our liking just in the oven).* Wrap chicken in bacon, trying to cover as much as possible. Place chicken in baking dish and season with salt and pepper. Sprinkle onion over chicken. Push potatoes all around chicken and edges of the dish. *Since I precooked the bacon, I also had to pour the bacon grease into the pan for the potatoes to cook in). Combine seasoning and sprinkle over chicken and potatoes. Bake for 1 hour or til bacon is crisp and potatoes are tender.



These brownies are very yummy too. They're also extremely easy.

S'mores Brownies - 220 each (makes 16 brownies)
  • 1 box of brownie mix
  • 2 cups of mini marshmallows
  • 4 graham crackers, broken
  • 2 milk chocolate candy bars (1.55 oz each) broken into 1 inch squares
Bake brownies. After removing pan from oven, set oven to broil. Immediately sprinkle marshmallows and crackers over brownies. Broil 4-5 inches from heat for around 30 seconds or until marshmallows are golden (keep an eye on it because they get toasted quickly). Sprinkle chocolate candy on top.

When I first saw the title, I read chicken-and-s'mores brownies. Hmm. Interesting.
